Grandma's Noodles
makes alot
Ingredients
- 1 egg
- 3 yolks
- 1 Tablespoon vinegar
- 3 Tablespoons water
- 1-2 teaspoons salt
- 2 cups flour
Directions (to the best of my memory)
- In a medium size bowl, add the egg and separated egg yolks. Whisk well with a fork.
- Add in water, vinegar, salt, and 1 cup of flour.
- Mix until it's too think to do so with a fork, then use your hands to knead, adding flour in as needed until the dough is a smooth ball.
- Let dough rest for 15-30 minutes. Divide the dough into 2-4 pieces, and dump onto a floured surface. Roll the dough out thin, about a 1/8 of an inch or thinner (however thick you like noodles).
- Once it is rolled out thin enough you can let to dry for awhile for easier cutting later, or cut now into short strips and use alot of flour so it doesn't stick.
- Can be cooked immediately, or let to dry for a few hours for easier storage (store in freezer).
- Cook in salted boiling liquid (broth is delicious) until tender, and enjoy!
