Sandi's Soup

original recipe

makes 6-8 servings

Ingredients

Directions

  1. Place the cashews in a bowl and cover them with water. Leave them to soak while you make the recipe.
  2. Dice the onion. Thinly slice the celery. Cut the carrot into rounds. Slice the mushrooms. Mince the garlic.
  3. Add the olive oil to a Dutch oven. Add the onion, celery and carrot to cook, stirring occasionally until lightly browned. Add mushrooms and saute for 2 minutes. Add garlic, thyme and oregano and stir for 2 minutes.
  4. Add the broth, wild rice, salt, and black pepper. Bring to a simmer. Simmer uncovered for 20 minutes. Then add the beans (drained and rinsed), and continue to simmer uncovered for 30 to 35 minutes more, or until rice breaks open.
  5. Using a liquid cup measure, carefully remove 2 cups of the hot soup (including broth, veggies and rice) to a blender. Add 1 cup water. Drain the cashews and add them to the blender, along with the dried sage. Blend on high for about 1 minute until creamy. Then pour the creamy mixture back into the soup.
  6. Add the soy sauce. Taste, and adjust seasonings as desired. Garnish with fresh ground pepper.



Flour Tortillas

makes about 12 tortillas

  1. In a large bowl, combine flour, salt, and baking powder.
  2. Combine lard until the flour mixture is crumbly.
  3. Add hot water and combine well until dough ball forms.
  4. Divide dough into 12-14 dough balls. Let rest in bowl with damp towel covering it for at least 15 minutes.
  5. Lightly dust work surface and rolling pin with flour.
  6. Roll out dough ball into a thin circular shape.
  7. Preheat a griddle or skillet on medium high heat. Then, place a torilla on the griddle and cook cook until little bubbles start to form (about 30 seconds).
  8. Flip and cook on the other side for about 30 seconds until it is cooked with very light browning.



Pancake Mix

For Mix

  1. Put all ingredients in a bowl and mix well. Store in a sealed airtight container.

For Pancakes

makes 6 medium pancakes

  1. Mix 1 cup mix with 1 cup water or milk of your choice, 1 Tablespoon oil, and (otional) 1 splash of vanilla, and (optional) your choice of toppings.
  2. Preheat pan to medium heat.
  3. Note:For crispy edges, make sure the batter is a little on the thin side, and coat the whole bottom of the pan with enough oil until it pools a little when you tipe the pan. Add more oil for every pancake.
  4. Pour about a 1/4 a cup of batter into the pan, and let cook until you see bubbles on the top.
  5. Flip and let cook until golden brown, and serve.



Hot Chocolate Mix

For Mix

  1. Mix all ingredients until there are no lumps. Store in airtight container.

For Hot Chocolate

makes 1 cup

  1. Heat about 1 cup of water (if you used powdered milk in mix), or your choice of milk, until it starts steaming.
  2. Mix 2 tablespoons (more or less if you like) of mix into the hot liquid, and enjoy.



Grandma's Noodles

makes alot

Ingredients

Directions (to the best of my memory)

  1. In a medium size bowl, add the egg and separated egg yolks. Whisk well with a fork.
  2. Add in water, vinegar, salt, and 1 cup of flour.
  3. Mix until it's too think to do so with a fork, then use your hands to knead, adding flour in as needed until the dough is a smooth ball.
  4. Let dough rest for 15-30 minutes. Divide the dough into 2-4 pieces, and dump onto a floured surface. Roll the dough out thin, about a 1/8 of an inch or thinner (however thick you like noodles).
  5. Once it is rolled out thin enough you can let to dry for awhile for easier cutting later, or cut now into short strips and use alot of flour so it doesn't stick.
  6. Can be cooked immediately, or let to dry for a few hours for easier storage (store in freezer).
  7. Cook in salted boiling liquid (broth is delicious) until tender, and enjoy!



Chocolate Pudding Cake

makes one 9x9 inch pan

  1. Preheat oven to 350 degrees F ( 175 degrees C).
  2. In ungreased 9 inch square pan, stir together flour, white sugar, cocoa, the baking powder, and salt. Mix in milk, oil, and vanilla with a fork until smooth.
  3. Spread batter evenly in pan (batter will be thick). Sprinkle with brown sugar and 1/4 cup cocoa. Pour boiling water over batter.
  4. Bake at 350 degrees F (175 degrees C) for 40 minutes.
  5. Let stand 15 minutes, then spoon into dessert dishes. Invert each square onto dessert plate and spoon sauce over each serving. Top with ice cream or whipped topping, if desired.



Microwave Mug Brownie

makes 1 serving

Directions

  1. In a medium microwavable mug (roughly 1 cup measurement) mix together the oil, cocoa powder, brown sugar, and salt.
  2. Then, add in the milk, and flour, and mix together until you form your batter.
  3. Mix in the chocolate chips, or just sprinkle them on top.
  4. Microwave for 1-2 minutes or until it has risen and the batter doesn't look wet. Your timing might vary depending on your microwave and mug.
  5. Serve warm with vanilla ice cream & enjoy!



(Chocolate) Avocado Pudding

makes 2-4 servings

Ingredients

Directions

  1. Slice the avocados in half and remove the pit. Scoop out the flesh into a food processor (regular blender or emersion blender work fine too). Add the remaining ingredients
  2. Blend until smooth and creamy, scraping down the sides as needed. Test and see if you'd like to add any additional sweetener or salt.
  3. Serve with your favorite toppings, such as hazelnuts and flaky sea salt.
